Occurrence of fumonisins in foods

Fumonisins (FB) are synthesized mainly by different species of the genus Fusarium and FB1 is the predominating fumonisin isolated in foods. FB1 shows different toxicological effects in humans and animals and has been associated with esophageal cancer in different countries. This review presents an overview of the worldwide occurrence of fumonisins in crops and human foods being corn and corn meal the most contaminated foods, and reviews variations of the presence of these mycotoxins in foods and in agricultural crops. Detection of Fusarium Species in Clinical Specimens by Probe-Based Real-Time PCR

The mold Fusarium is a ubiquitous fungus causing plant, animal and human infections. In humans, Fusarium spp. are the major cause of eye infections in patients wearing contact lenses or after local trauma. Systemic infections by Fusarium spp. mainly occur in immunosuppressed patients and can disseminate throughout the human body. Due to high levels of resistance to antifungals a fast identification of the causative agent is an urgent need. Intake, decontamination and legislation of fumonisins in foods

Fumonisins (FB) are mycotoxins synthesized mainly by different species of the genus Fusarium with different toxicological effects in humans and animals and associated to esophageal cancer in different countries. This review gives an overview about the intake of fumosins from foods with a careful attention for people with gluten intolerance, celiac or Duhring's disease, infants and alcohol consumers. Furthermore, a section on decontamination is focused on physical, chemical and biological methods. Finally, the legislation of fumonisins in foods in different countries is reviewed.
